When you fire up your oven to cook this bread, use small kindling and keep feeding the fire until you can put larger kindling on. After about an hour you should be able to put a large piece of wood onto the fire and leave it to get lots of lovely red embers. After the oven is nice and hot, take out the embers and the oven is ready to bake bread.

Make sure the door is closed when you put your dough into the oven. The bread should be ready within 10 minutes. Always leave the bread to sit for another 15 minutes after you have taken it out.

  • 1 Packet Yeast
  • 1 Tbs Honey
  • 2 Tbs Olive Oil
  • Pinch Salt
  • ½ Cup Cheese
  • 1 tsp Rosemary
  • ½ Onion - Chopped
  • 1 Egg
  • 2½ Cups Gluten Free Flour
  1. Add yeast to warm water in a bowl and let sit for 30 mins until activated. You will see bubbles on the surface.
  2. Mix eggs, oil, onion, rosemary, cheese and seasoning together.
  3. Put flour into a mixer and add in the yeast mixture and alternate with the egg/oil mixture.
  4. Spoon a dollops of dough onto a baking tray.
  5. Let rise in a warm location for one hour.
  6. Light your oven and heat for 2 hours. When you have coals, scrape them out or push to the back of the oven.
  7. Bake at 350F until brown, about 10 minutes. Turn the tray so you bake the other side.
  8. Leave the bread to sit for 15 minutes before you slice it.
